This Mediterranean Medley Panuozzo is a vibrant, flavour‑packed sandwich option ideal for cafés, bars, restaurants and food‑to‑go counters. Built on our ambient, par‑baked Panuozzo which is made from authentic Neapolitan‑style pizza dough and delivers artisan quality with minimal prep.

With roasted aubergine, creamy mozzarella, basil, and rich red pesto (or sweet chilli hummus as an alternative), this sandwich brings the sunshine of the Mediterranean straight to your menu.

Ingredients

A lot of the ingredients can be found at your local wholesaler. There is nothing stopping you for creating this recipe on our ambient Puccia Bun instead.

Preparation

Roast or cook the aubergine slices in advance until they are soft, golden and ready to layer. 

Method

  1. Preheat the oven to 180-200°C. Open the pre‑sliced Panuozzo and place it cut‑side up on a tray. Warm for 3–4 minutes until lightly crisp. ovens.

  2. Spread a generous layer of red pesto (or sweet chilli hummus) on the bottom half of the Panuozzo.
  3. Add the cooked aubergine slices evenly across the base.
     
  4. Tear the mozzarella ball into pieces and add over the aubergine.

  5. Top with sundried tomatoes and fresh basil leaves for aroma and colour.

  6. Close the sandwich, slice in half or into three portions, and serve immediately.


For more premium menu presentation, serve with a fresh side salad or high-quality crisps such as Torres or Kettle.
