How should I store my frozen dough balls?
Keep your dough balls sealed in their original packaging and store them in a freezer at -18°C or colder. This keeps the yeast dormant and preserves the flavour and texture of the dough. Avoid allowing them to partially thaw and refreeze, as this can damage the gluten structure and affect the rise.
How long will they last in the freezer?
Our frozen dough balls remain at their best for up to twelve months when stored properly. Always check the best before date on the packaging, and use them within that time for the best flavour and performance. Even though they are safe to use beyond that point, the quality may gradually decline.
What is the best way to defrost them?
The best way to defrost dough balls is slowly and gently. Remove the quantity you need and place them on a tray lined with baking parchment. Lightly cover them with cling film to prevent them from drying out. Cold Prove the tray in the fridge for 24 hours. This steady thaw allows the yeast to wake up gradually, keeping the dough soft, elastic and full of flavour.
Can I defrost them more quickly?
If you need to speed things up, you can defrost dough balls at room temperature. Place them on a tray, cover them, and leave them to thaw for two to three hours. Once fully defrosted, move on to the proving stage without delay so that they do not overferment. Take extra care in warm kitchens, as the dough will become active much faster.
How do I prove dough balls after defrosting?
Once defrosted, leave the dough covered at room temperature for one to two hours to prove. You will notice the dough relaxing, softening and gently expanding. It is ready to use when it has almost doubled in size and springs back slowly when pressed with a fingertip. A well-proved dough will give your pizza crust a light open crumb and beautiful bubbles.
How should I shape the dough?
Handle the dough gently to preserve the air bubbles that have developed during proving. Dust your hands and the work surface with flour, then press the dough from the centre outwards using your fingertips. Rotate as you go to create an even round. Avoid using a rolling pin, as this can flatten the structure and create a dense crust. The dough should stretch easily if it has been proved properly.
Can I refreeze them once defrosted?
No. Once defrosted, the dough must not be refrozen. Freezing it again will damage the yeast activity and gluten strands, leading to a dense and uneven bake. Always plan ahead and only defrost the number of dough balls that you need for the day.
How should I bake pizzas made from these dough balls?
Bake your pizzas in a very hot oven to achieve the best rise and crust. Preheat your oven with a pizza stone, baking steel or heavy tray inside to around 250°C. Once the base is topped, slide it directly onto the hot surface and bake for five to seven minutes until the base is puffed and golden. A very hot base ensures a crisp bottom while keeping the interior soft and light.
What ingredients are in the dough balls?
Our dough balls are made from: Wheat flour (wheat flour, ascorbic acid, malted wheat flour), water, rapeseed oil, rye sourdough, yeast, salt and sugar. May contain traces of Soya, Mustard, Sesame. There are no preservatives, improvers or additives. This gives you the same clean flavour and natural structure that you would expect from handmade artisan dough.
Are they suitable for vegetarians and vegans?
Yes, our frozen dough balls are suitable for both vegetarians and vegans. The dough contains no dairy, eggs or animal products, making it a versatile base for any style of pizza, from classic Margherita to plant-based creations.
Can I use them for bread or other recipes?
Absolutely. While our frozen dough balls are designed for authentic Neapolitan-style pizzas, they are also excellent for flatbreads, garlic knots, focaccia or bread rolls. After proving, shape the dough as needed, add toppings or flavourings, and bake as you would any bread dough.
