Bake your pizzas in a very hot oven to achieve the best rise and crust. Preheat your oven with a pizza stone, baking steel or heavy tray inside to around 250°C. Once the base is topped, slide it directly onto the hot surface and bake for five to seven minutes until the base is puffed and golden. A very hot base ensures a crisp bottom while keeping the interior soft and light.
