How do I prove dough balls after defrosting?

Once defrosted, leave the dough covered at room temperature for one to two hours to prove. You will notice the dough relaxing, softening and gently expanding. It is ready to use when it has almost doubled in size and springs back slowly when pressed with a fingertip. A well-proved dough will give your pizza crust a light open crumb and beautiful bubbles.
